I

remember the first time I was in love. I was five, his name was Tim, and he preferred my friend Shannon because she was – and I quote – “blonde and shorter than you”. I, on the other hand, had jet black hair, knobbly knees and a rather wild imagination. As they 'married' on the school field during our ten minute break one day, I played second-fiddle as the emotional bridesmaid, my chin wobbling away. Needless to say, I wasn't on the verge of tears for any reason other than feeling completely sorry for myself. Oh the heartbreak! Love is beautifully simple and achingly complex at times - the potent intoxication one feels in the 'Honeymoon Phase'; the euphoric highs chasing the tail of the perilous lows and vice versa; the feeling of despair when that 'First Love' that promised you the moon and the stars, leaves you for university, a new city, or, the absolute worst, a new significant other. Yes, it's undeniable; love can be an untameable beast at times. I'm a big fan of the 'Forever Afters' and feel very blessed to have been a part of the team working their romantic magic on our annual Wedding Inspirations Magazine that you will find at the heart of today's issue. From the most whimsical styles redefining wedding attire through to dreamy diamonds and decadent venues, we have you covered. For those ready to 'put a ring on it' or in the process of preparing for your Big Day, we hope you get swept up in the excitement of what you find in these pages. What inspired your professional journey? I was brought up in the baking industry. I have been baking for as long as I can remember. It really owes a lot to my Dad who helped me sign up for my apprenticeship and runs Lyttelton Bakery. I started to pursue baking as a career when I finished school in 2010 – it took a bit longer than expected due to the earthquakes. What does a career in baking offer? While there have been some nail biting moments along the way, I wouldn't change anything about my decision to choose baking as a career. I have learnt so much about so many subjects including technology and science. I am incredibly passionate about the industry and the opportunity to network and meet other people. What are 'Glamour Cakes'? Glamour Cakes are very much my thing. It's interesting because when I first started out it was an idea, a pet project.

I am such a perfectionist and my vision was to create something pretty and glamorous while also being wholesome and delicious. Glamour Cakes are designed to push the boundaries – in terms of ingredients and look. What gives you your key point of difference? I feel I'm still working out my difference to everyone else, but at this stage what makes me different is my sense of adventure – I'm always creating a new product. It's what our customers have come to expect! Do you have future ambitions with your 'Glamour Cakes' crusade? I definitely want to see where Glamour Cakes take me – it would be a dream for me to have my own business. Right now, I am very fortunate to be able to learn how to run a business through Lyttelton Bakery. What's the craziest recipe you've ever concocted? Lollycake Cheesecake! It went viral on Facebook. I couldn't believe it – after I

posted it the numbers just started climbing. For me it's definitely about taking calculated risks – the opportunities are so powerful when you do. It's about disciplined training too – putting time aside for what you really want to do. I dedicate time to practice and theory to perfect my craft. Ultimately, you can achieve anything you put your mind to. Words of wisdom for aspiring creatives? I would say at the end of the day 'go for it'. Don't be afraid to put your hand up for help. When you are challenged and learning, you will find people who are happy to help you on your way. I've been fortunate to have the support of the Birt Committee (Baking Industry Research Trust) who put me forward for an Australasian Baking Competition.

“The post-earthquake cityscape of Christchurch can be challenging. The street art-murals transform it and offer a beautiful, uplifting backdrop,” says George Shaw, Director of the Oi YOU! street-art events that have been brightening up the city for the past three years.

G

eorge and his partner, Shannon Webster, have been the driving force behind this, inviting leading overseas street artists to come to Christchurch and add their personal touch to the city as a part of their RISE and SPECTRUM events. “Our Oi YOU! shows are a unique blend of outdoor murals and stunning indoor exhibitions,” George says. Originally from Britain, George and Shannon's passion for street art was sparked by Banksy, the England-based graffiti artist of unverified identity. After purchasing a few Banksy prints in 2005,

they tracked down the artist's management, seeking something more unique. These connections led to George and Shannon being invited to a preview of the artist's Los Angeles exhibition in 2006. Although George claims that, to his knowledge, he has never met the elusive artist, he and Shannon now own the biggest Banksy collection in the Southern Hemisphere. Their involvement with Christchurch was instigated after the earthquakes by the Ministry of Awesome, which supports entrepreneurs for local projects and events. They were introduced to the management of the Canterbury Museum, leading to their first exhibition in this city, the RISE Festival,

beginning in December 2013. During its three-month run, more than 248,000 visitors went through the museum, smashing previous visitor records for any event held there. RISE also went on to win the coveted New Zealand Museum Show of the Year award. Out on the streets during the opening week, overseas artists painted about a dozen beautiful murals. The artists included Telmo and Miel from Holland, Seth from France and Cuban-American Jorge Rodriguez-Gerada. “Our whole focus now is on Christchurch. Spectrum took 3 1/2 months to put together. Now, we have to imagine a new show and go through a myriad of ideas.”

Rowing; sailing; swimming; seamanship – even some flying – are activities we usually do not associate with scouting, but they certainly keep the children going at the Mt Pleasant Sea Scout Group.

“W

e do the same as land scouts but we do sea things as well,” says Group Leader Roger Horton, who has been guiding the Mt Pleasant Sea Scouts, aged from six to 19, including several girls, since 1988. “We've got 74 young members and 12 older leaders, who take them through all the activities and sections. The kids love the whole gambit of stuff we do – sailing; playing games; camping; regattas; motorbiking; flying. They do stuff appropriate to their age groups.”

Members are divided into four age groups, starting with the youngest - Keas, then Cubs, Scouts and the older Venturers, who are more self-organised so that they can take care of themselves. “There are 57 Sea Scout groups in New Zealand, all of whom use the same type of open boat for rowing and sailing. It was designed in New Zealand in 1910. It can hold six youngsters and a cox for rowing, or seven kids for sailing. It's a fantastic training vessel for teaching them how to sail and seamanship,” Roger says.

A four-day regional regatta for the 10 Sea Scout groups (from Nelson to Mount Cook) was held at Lake Brunner on the West Coast over the Easter weekend. Activities included rowing, sailing and swimming races. There were also seamanship tests and a camping competition. Actual flying lessons for youngsters are something not usually associated with scouts, but Roger has them participating in these also. “Early this year, I took 20 boys, aged 10

to 14, to the West Melton airfield, which is part of the Canterbury Aero Club. They have three two-seater Tomahawk light aircraft each with an instructor,” says Roger, who has a private pilot's licence. “The boys sit in the seat on the left side of the instructor and he tells them what to do. They all took off and landed. On their first landing attempt, they did a quick touch-down and immediately took off again. On their second landing, they stayed down. The plane is dual-control with the instructor at the other controls.

Quite a lot of them also had a go.” Roger has been a Scouts Leader for 40 years. He emigrated from England in 1979 and started here with the Dallington Scouts Group. He has been with the Mt Pleasant group for 28 years.

Roger has always gone for individual sports hence his interest in sailing, flying and fencing. In fact, it was his interest in fencing that first got him involved with scouts back in England, where a coworker asked him to teach fencing to scouts for one night. He then became involved in other scouting activities. Now, in Christchurch, he is also teaching fencing at Shirley Boys High and Chinsallwood Intermediate school. New life in the old theatre The Three Bears and Goldilocks have settled into Canterbury Children's Theatre's (CCT) historic building – The Malthouse - for the school holidays, which is now quakesafe and secure.

fter 18-months of restoration to The Malthouse, its Cushion Theatre is showcasing a twist to the favourite fairytale from 16 April to 1 May. “The environmental moral to the story is about humans encroaching on animals’ habitats. Goldilocks is the villain here – and learns a lesson,” Director Victoria Powell says. “The actors interact with the audience making it easy for children three years and over to engage and hopefully forge a lifelong love of theatre.” There's a meet and greet and photo opportunities afterwards.

“The audience at our Aladdin play thought the recent Valentine's Day quake was just part of the sound effects, not even realising what was happening,” she says. “There were lots of

positive comments. The building didn't even move.” Canterbury Children's Theatre President, Suzanne Rivers, says earthquake strengthening was orchestrated by former Chair of The Malthouse, Ian Beswick, in 2003 otherwise it would not have had such a fortunate fate. She says foundations have been re-laid to an incredible strength along with outstanding restoration and improvements. Every stone of its enchanted exterior has been returned to its original place. With well-insulated walls and new heat pumps, Cushion Theatre is fresh, warm and comfortable with new big, bright cushions and plenty of parking. A LOVE STORY FOR THE AGES Rangiora and wider North Canterbury are abuzz with expectation. The much anticipated annual production by the North Canterbury Musical Society is soon to hit the stage at the Rangiora Town Hall.

T

his year it's Elton John and Tim Rice's Tony and Grammy awardwinning Aida. The show may be based on Giuseppe Verdi's 19th century opera of the same name, but opera this is not. Rather it is contemporary musical theatre with a pulsating score, a big poprock sound and cleverly crafted lyrics.

Songs such as Written in the Stars, Every Story is a Love Story and Fortune Favours the Brave are part of the musical score. “The North Canterbury Musical Society is renowned for its musical productions”, Director Teresa Dann says. “Aida is definitely the most beautiful love story ever told.” That story is an epic tale of love, loyalty and betrayal chronicling the love triangle between Aida, a Nubian princess stolen from her country; Amneris, an Egyptian princess, and Radames, the soldier they both love. “There's something in this show for everyone,” Teresa says. “Superb songs; beautiful duets; fabulous orchestration and really big dance numbers. There are 30 in the cast and our three leads are simply stunning. It has been a joy to work on the production and with all the wonderful local volunteer helpers for this - my directorial debut.” The season of Aida runs from 5 – 21 May. Most performances are at 7.30pm, but there are also three matinees. Tickets are $32 for adults and $27 for seniors, students and children.

The brainchild of Helen Milburn - an antique dealer herself - the original market was only ever meant to be a one-off back in 2009. During a visit two years ago, the market was starting to flourish. On the beautiful sunny Sunday in March 2016 when I am there, the entire property is buzzing with people. It is obvious the market has become a much-loved fixture in the city for those who are on the look-out for something a little bit different and a little bit vintage. “I never envisaged it getting as big as this,” says Helen, who now organises the monthly market with her daughter Sarah. The entire Rochester Villa is filled with

treasures, most of which are for sale with some of Helen's own pieces also on display. Original fixtures feature throughout, such as the coal range in the kitchen, adding to the wonderfully authentic feel. Up to 40 stalls are scattered throughout

the garden, each with its very own speciality of shabby chic. There are old glass milk bottles; wonderful mirrors; crocheted rugs; beautiful linen and embroidery; vintage jewellery and fashion; hundreds of buttons; records; books; an array of homeware, and a selection of sweet treats and breads. Out the back of the villa, Sarah has created the perfect spot to enjoy a Devonshire tea (scones made fresh by Helen at a very early hour on the day of the market) at a table under their collection of bright umbrellas. Doily covered sugar bowls sit next to little teapots filled with flowers, with the tables busy with those looking over the treasures they have found. City set for largest public library in South Island The city's new central library – which will be the largest public library within the South Island – has been put out to tender. Ground works have commenced on site, along with work to remove asbestosriddled demolition materials, which will allow construction to commence later this year in preparation for a scheduled completion in early 2018. Historic Caffe Roma building to get new lease on life The 1930s Italian palazzo-style Midland Club building (more commonly known as the Caffe Roma building on Oxford Terrace between Gloucester Street and Worcester Boulevard) has been sold to Club Lane Ltd, who wants to restore it. Once a popular meeting spot for lawyers and businessmen, it has become a target for vandals and squatters post-quake. Its would-be rescuers have applied to the Christchurch City Council for a $869,500 heritage grant to help pay for the work.

s we pick ourselves up and dust ourselves off – both in the figurative and literal sense – Christchurch's core is becoming a showcase for the kind of clever only Kiwis are truly capable of. The city is emerging with an intriguing new edge and while the Central Business District that bore the brunt of the quakes is still a work in progress, creative and passionate locals have been taking the opportunity and running with it. Little by little and project by project, the ever-evolving urban landscape is taking form with striking new buildings such as the innovative wave-like façade of 151 Cambridge Terrace. There are the lovingly restored heritage precincts such as the Isaac Theatre Royal and 1930s New Regent Street sitting among refreshed open spaces and gap filler installations, which illustrate the city's edgy new attitude.

Little by little and project by project, the ever-evolving urban landscape is taking form.

Unique out-of-the-box projects such as the Re:Start Container Mall and the Transitional 'Cardboard' Cathedral are interspersed between creative street art, clever retail spaces and a raft of quality hospitality hot spots creating a compelling new vibe. In fact, out-of-the-box sums up the new city space well. When C1 reopened in November 2012 in one of the remaining heritage buildings, it was likely the first in the world to deliver food at 100km/hr by pneumatic tube and now its own rooftop vineyard is producing pinot noir in the CBD. At 154 High Street, an edible landscape is also proving a popular central spot. A shared space accessible to all, the transitional farm enables the composting of organic waste from inner city hospitality businesses, as well as a place to create produce – from ground preparation, sowing and planting to harvesting. Use charcoal as the building block of your wardrobe upon which you can add paler shades of grey as you grow in confidence. Monochromatic grey on grey is best achieved by layering up different shades of grey in order to create interest. Use accents of grey to give light relief to outfits in one colour with shoes, scarves, jewellery or a statement bag on your arm. An incredibly versatile colour, grey can be paired with the whole spectrum of the rainbow as long as the shade of grey you opt for is either a cool or warm tone to work in synchronicity. Another way to break up monotony is by paying close attention to texture. With winter approaching, there are various natural fibres like wool, silk, fur and leather to add a tactile quality. Either sleek and tailored, or relaxed and chunky, wool is seen in coats and jackets; fine merino cigarette pants; pencil skirts and knitwear, while soft and supple leather or suede adds interest with shoes; handbags; belts and even jewellery. Pattern provides an element of interest to break up solid blocks of colour. Look to herringbone or tweed for 'Ivy League' elegance and geometrics or modern prints for cutting-edge swag.

We like to think we're different from the next person, but when it comes down to it we all want the same two things in life - to be happy and avoid suffering. In our tireless pursuit of happiness and with our fruitless avoid-pain-at-all-costs attitude, we are like a dog constantly chasing its tail with little satisfaction.

'Patient acceptance' can make our journey through life a much more enjoyable one.

e've heard the cliché, “It's not about the cards you're dealt, but how you play your hand,” but do we really understand its true meaning, or perhaps more importantly, the practical steps to get there? The fact of the matter is we all want to be happy - all of the time. So it's no wonder that we're continually disappointed and left wondering where we went wrong. If, instead, we apply a little 'patient acceptance' instead of righteous indignation, then we are bound to find our journey through life to be a much more enjoyable one. When I say patient acceptance, it's important not to mistake this for simply gritting your teeth and baring it. With mindfulness, you will begin to sense if simply holding on is what you've mistakenly believed to be 'patience' when it in fact creates a stuck, tight, unsettled feeling. When you're genuinely practicing the art of patient acceptance, a feeling of total peace will wash over you, cleansing you of all bad feelings. Of course this doesn't mean you have to go through life passively, never changing things within your control, but it does mean you can respond with an open-heart and mind, which can lead to a better outcome for all.

f you've yet to become acquainted, you've been hiding under a rock somewhere for quite some time now. It's the chic yet low maintenance (relatively speaking) do donned the world over as a beautiful middle-ground between long and short hair; a stylish compromise that can be worn up or down. The hallmark of a great Lob is shiny, loved locks minus any of those pesky split ends that wreak havoc on an otherwise smart style. And that's before you even start thinking about the wedding dress.

o it's not surprising that many brides opt for unique bridesmaid dresses. It's not necessarily new, but as laid-back weddings take centre stage, so too is this ode to personality. But, while it's easy to think mixing and matching bridesmaid dresses means one thing to scratch off your to-do list, think

again. Intentionally mismatching outfits can be just as much work for those involved as more traditional options. So we've broken it down with three easy ways to mix and match for your big day. 1. Different shades of the same colour palette are the easiest way to mix and match bridesmaid dresses. The hardest part is ensuring your team stick with the same colour family and that the blush doesn't turn into hot pink or the nude into gold. 2. Another way to mix and match is with

texture. Whether it's sequins or lace, texture is a great way to achieve a cohesive look for your bridal party. Try all lace in different colours, or feature the texture in smaller capacities on some girls and all over on others – a lace skirt for one, laced sleeves for another. 3. Or perhaps give it a go with patterns to add character and diversity to the bridal party. Give pretty floral patterns a go or dare to try a striped theme. IN TIME There are precious moments in life, in our own and in those around us, which can easily pass by unnoticed. Catherine Smith from Lasting Expressions Photography captures these moments in her portraits across a lifetime, from maternity and newborn to families and milestone portraits at all ages.

t is a moment in time that will last forever,” Catherine says with her portraiture inspired in part by a treasured image of her own grandmother taken in the 1880s. “It is lovely to have a portrait taken of yourself, simply for your own pleasure and to pass on to others.” Her style is both natural and discrete, with sleeping newborn babies gently draped in fabric and tasteful maternity shots. You've heard the stories - when normally sweet-natured Emily, that ray of sunshine you've known since high school, suddenly loses all sense of reality.

W

hen speeches are required to be submitted for approval and revision; where to-do lists include weigh-ins and measurements; where there's a moratorium on future tattoos and body piercings and when bed times and certain swimwear attire are strictly enforced. After all, one can't be expected to accommodate puffy eyes and tan lines in one's wedding photos! They are a master class in the jokingbut-not-joking-seriously-DON'T-cut-yourhair-without-my-permission style of friend management. So, how do you deal with bridezilla? How do you combat a dizzying degree of irrationality, extreme diva demands and passive-aggressive power plays?

Here are our tips to keep a bridezilla at bay: 1. Smile and nod. Do your best to meet her outlandish demands. Weddings are transitory so (hopefully) things will return to normal soon and who knows, this could all play out in reverse one day when it's your turn and you might need her to return the favour. 2. Delegate. Firstly, there's safety in numbers. Delegate those diva demands to alleviate your own stress and, better yet, it divides the blame if things 'turn to custard'. 3. Listen. The stress of pulling off perfection can get to anyone, so offer her a shoulder to cry on, an ear to vent to and just be there for her. 4. Negotiate. Ok, if the cost of being a bridesmaid and meeting the bride's demands is going to put you in the poorhouse, it's time to speak up. You don't have to be unkind and if you come to the table with cheaper alternatives she might even thank you.

5. Stay cool, calm and collected. Don't take anything personally right now and try to put yourself in the bride's shoes. She's stressed! If you do need to vent, do it to non-mutual friends – otherwise it will get back to the bride. Always. 6. Distract. I could have replaced the word 'distract' with the word 'wine' but in the essence of being constructive… declare a ceasefire on wedding planning and indulge in a girls' night with the bride and bridesmaids over chocolate, chick flicks and… okay, wine! 7. Be firm. Sometimes a bridezilla simply goes too far. You don't have to be aggressive or confrontational, but stand up for yourself. Let her know you're not going to stand for it, but that you love her and are more than happy to help her if she's willing to chill.

Hanmer Springs is enjoying a surge in visitor numbers after the opening of a new spa and shopping centre.

M

ore than 100,000 people visited Hanmer Springs Thermal Pools and Spa between Boxing Day last year and the end of January 2016 - a new record for that period. February was also busy with more than 40,000 visitors 29% of them from overseas. The pools' General Manager, Graeme Abbot, says there are several reasons for the high visitor numbers. “We've been doing a lot of work in attracting offshore markets to the village – particularly China and Australia. The numbers for February (during the Chinese New Year holiday period) show that's paying off. “Also, new developments have been

drawing in the local market. The Village Shopping Centre was built on Conical Hill Road late in 2015 - it is already proving popular as is Artisan Spa that opened within it.” Owned and operated by the pools, Artisan Spa has a real focus on creating visibly beautiful skin using both natural and scientifically proven products. It is also one of just a handful of spas across New Zealand to have the Observe520 Skin Analysis machine. “It's a remarkable piece of equipment that uses different types of light to look beneath the surface layer of the skin. The machine then identifies hydration levels, pigmentation, oil flow and the like. It can

I had an invitation come through on my phone: “You are cordially invited to join the next meeting of the Lyttleton Whisky Appreciation Society”.

T

he excitement was tangible. An organisation more select and secretive than the Freemasons had finally decided to initiate me into its fold. But before we delve into that, let's get a background on the amber Aqua Vitae. If it's from Scotland it is 'Whisky', if it's from Ireland it would be 'Whiskey'. Distilled for hundreds of years in both countries, traditionally from maize or barley, every bottle has a unique set of flavours, aroma and quality. Bottles are sought on quality, rarity and age and there's a strong market for financial gain and the pleasure of drinking. If you're buying for investment and you stuff it up, you can still drink it. Dram Fest, New Zealand's Premier Whisky Festival was held here in February. Drawing people from all over the world, it was a massive success. I caught up with Michael F. Fraser Milne from Whisky Galore to chat about the increase of interest in the drink. “Go back 15 years and it was predominantly males 40 plus, now there's a new 20-plus group, and that includes females, taking it seriously. There's a very broad range of people you wouldn't expect finding more and more pleasure in learning about Whisky.” With exports $4.7 billion from Whisky in Scotland alone, it's a thriving business. Lyttleton Whisky Appreciation Society isn't operating in isolation either. Allegedly, there are various groups across town repeating this ritual on a monthly basis. The society has a floating number at any gathering between 10 and 20 people. As an inductee, you must bring something good to the table. The right mix of burnt caramel or peaty goodness to excite the others. I took a 12-year-old bottle of Dalmore 12 hoping it would find favour. With a mix of arts and food people the night was a great success and the conversation was lively. Oysters; smoked salmon; delicious steak and 12 variants of Whisky were tried and tested. In the end, I thoroughly enjoyed the experience and hope that the covenant continues with the group for the most ordinary Whisky can be exceptional in the right company.

From the pen of the tiger THE 'SLOW FOOD, FAST' C PHILOSOPHY Great grub is an unequivocal asset to New Zealand. It'd also be fair to say that cuisine has taken a compelling step outside the square in Christchurch post-earthquake as innovators throw creative caution to the wind.

reat food with a point of different is certainly the professional mantra of Fine Fare Kitchen (FFK) at the container hub on Victoria Street. Created by merino exporter, Wayne Cameron, Fine Food Kitchen is all about slow-cooked food, served fast. Cameron saw an opportunity for affordable restaurant-quality food that can either be taken home or enjoyed with a fine wine al fresco. He then partnered up with Executive Chef Simon Levy whom he met at the end of 2014, sharing compatible aspirations around food. The concept for Fine Fare Kitchen was fine-tuned and they opened at the end of June 2015. “We were drawn together with a passion for good food and creating standout dishes from fresh seasonal produce,” Cameron adds. “We work hard to offer the best of the region. It's really important to us to understand our suppliers and be able to see how everything is grown sustainably, respectfully and above all else to maximise the flavor.” This extends to Cameron himself who has his own (small) merino flock that he runs in local orchards and vineyards specifically for FFK. “At Fine Fare Kitchen we are passionate about slow cooking, it allows for more interesting cuts of meat to be used - cuts that are generally sweeter and develop greater depth of flavour from longer cooking.” Fine Fare Kitchen works out of a kitchen based in a container; guests read a blackboard menu to place orders, and most of the meats are slow cooked and can be delivered quickly. ARANCINI Arancini, named after the little oranges that these fried rice balls are said to resemble, are well known as a handy way to use up leftover risotto. They found their way to The Villas and we feature our take on the Arancini in our platter selections available for our group bookings. For a simple version of our Portobello and Porcini Arancini, the ingredients and method are below. (Makes 10 medium balls)

Ingredients: 800ml chicken or vegetable stock 250g of leftover risotto rice (or arborio rice, cooked and cooled will do) 1/2 tsp salt Very generous pinch of saffron 50g parmesan or vegetarian alternative, grated 150g mozzarella, chopped into chunks 150g of fresh sautéed portobello & porcini mushrooms 1 egg 170g plain flour 500g dried breadcrumbs Vegetable oil, to cook

Method: • If you are using leftover risotto, skip the following step • Otherwise, bring the stock to the boil in a medium pan then add the rice, salt and saffron. Bring back to the boil; turn down the heat and simmer on a medium heat until stock is absorbed. Stir in the grated parmesan and season to taste, then leave to cool completely, (spread it out on a tray and place in fridge to hasten this if necessary) • Stir the mozzarella into the cool rice and check the seasoning. Roll a tablespoonful between wet palms to form a ball of your chosen size. Poke a hole in the middle and spoon your filling in. Plug the hole with extra rice. Repeat until all the rice is used up • Beat together the egg, flour and enough water to make a thick batter (about 175ml), and season. Put the breadcrumbs on to a plate • Heat the oil in a deep pan, no more than a third full, to 170C, or until a breadcrumb sizzles on contact. As it is heating, dip each rice ball in the batter to coat, then into the breadcrumbs, heaping them on top until it is well covered • Cook in batches until golden brown, making sure the oil comes back up to temperature between batches, and drain on kitchen towel • Sprinkle with a little salt while still warm and serve hot or cold.

t's good news then that the creative genius of Moroccan-born chef, Simo Abbari, has been channelled into a new culinary charmer - Simo's Mediterranean Marinades.
